ENTER. IT'S MY CHILI CON QUESO DIP!! DAMN IT!!


The colorful chili arrangement you see at the top,
I bought in Hatch, New Mexico, and it hangs over my kitchen window.



These are 50 pounds of green chili I
roasted myself over backyard BBQ grill. I could have had
them roast it for me for free, but I like to do it myself,
because I know exactly how to roast it so that the
peeling will slip off easily with just a couple of pulls
with my fingers.



After I roasted and cooled the chilis, I put them into
freezer bags then put them in the freezer.

I've often bragged that I'm call the Texas Queen of Hot,
and this is why. This is my very own authentic and
ORIGINAL chili con queso recipe that I invented, which
I'll share with you kids because I love you:



These are a few of the things you'll need.



Peel and chop green chilis.


Remove the veins of about 5 jalapeños chilis, and dice into
tiny pieces. I prefer to leave the veins in the jalapeños, because I ♥ my
chili like I like my men - HOT! :o)



Chop 1 small white onion. This little gaget is absolutely wonderful, because you can chop anything in only a few seconds. Before I bought it, I use to chop the top of an onion, and place it on top of my head, along with a cup of water on the table so I wouldn't cry. I don't have to do this anymore! :o)


Chop 4 cloves of garlic.


Dice the garlic into tiny pieces.


Dice 5 tomatoes into small pieces.


Slice about 2 cups of mushrooms. Saute the onions, garlic, jalapeños,
and mushrooms in extra virgin olive oil. DO NOT add salt because the Velveeta cheese and Campbell's Cream of Mushroom soup will make it salty enough!



Add the tomatoes, and green chili, and continue to saute all
the ingredients for just a little while longer.



Add 1/2 cup sour cream, and half of a can of Campbell's
Cream of Mushroom soup (DO NOT add water).



Add KRAFT Velveeta Cheese in slices, and
simmer slowly so cheese melts a little.



Keep simmering until the cheese looks a little like this. I like
to add just a little more sour cream at this point.



Add CARNATION Evaporated milk, and continue to simmer,
while stirring, so it won't burn on the bottom.



Serve warm in small bowls with chips.

You can also make this for BREAKFAST:



Saute 1 corn tortilla in olive oil. Add some chili con queso on
top of the tortilla, then add a fried egg on top, and add some
more chili con queso on top of the egg and tortilla.
