It took me only a few minutes to make this super delicious homemade Cream of Mushroom soup.

I like to buy the large containers of fresh mushrooms at Sam's or Costco. I noticed that I still had quite a few left and they were starting to go a little brown.

This is what I did:

I got some paper towels and DUSTED the mushrooms, sliced them and set them aside. NEVER wash mushrooms because that's what makes them go rubbery!

I diced a small onion and sautéed it in 2 tablespoons of I CAN'T BELIEVE IT'S NOT BUTTER.

I then removed the onions from the pot, and added 1/4 Cup flour and salt to taste, and sautéed flour to a browned roux.

To this I added 1 Cup regular milk, and 1 12 oz. can of evaporated milk and continued cooking and stirring.

I then added the sliced mushrooms and continued cooking until it came to a boil.

Optional - Served in bowls and added a few sprinkles of dry parsley leaves.

After you eat this soup, I promise you'll never want to eat can mushroom soup again.
